Ingredients

1 lb reserved shrimp from Grilled Lime Shrimp

1/2 cup chopped celery

1/3 cup mayo

1/2 tsp lime zest

1 tbs fresh lime juice

1/2 tsp fresh chopped tarragon

2 tbs melted butter

1 garlic clove, pressed

4 hot dog buns (or other bread)

lime wedges

lettuce leaves

Preparation

Preheat oven to 375

Coarsely chop reserved shrimp

Stir together celery, mayo, lime zest lime juice tarragon and shrimp in a bowl

Stir together the melted butter and pressed garlic clove, spread on the cut sides of bread and bake til toasted, 7-8 minutes. Spread shrimp mixture on bread and top with lettuce.

Serve with lime wedges
