Ingredients
For Crust:
9 graham crackers, crushed into dust
8 Tbs salted butter, melted
3 Tbs sugar
Salt to taste
For Filling:
Zest of approx. 4 Meyer lemons
5 egg yolks
14 oz can of sweetened condensed milk
3/4 cup Meyer lemon juice
Preparation
Pre-heat oven to 350 degrees.
To make crust: Combine well-crushed graham cracker with melted butter, sugar, and salt until mixture holds in a ball. Press mixture into bottom and sides of pie pan to form crust. Blind bake for 15 minutes, then let cool to room temperature.
To make filling: Beat the egg yolks with zest until frothy. Beat in the condensed milk and lemon juice. Let sit for approx. 15 minutes.
Once crust is cool, pour in filling and cook for 14-17 minutes, until slightly jiggly in the center. Cool in fridge (or just leave outside if it happens to be -50 degrees where you are). Serve cold.
