Ingredients

Chicken soup

5 lbs whole chicken , cut up

2 tbs salt to taste

2 tsp pepper to taste

4 stalk celery sliced

5 carrots, diced

2 pkgs Lipton onion soup mix

10 whole peppercorns

10 whole allspice

2 tbs fresh parsley

Chicken salad

1 tsp salt to taste

1/2 tsp pepper to taste

1/2 tsp celery seed to taste

3 stalk celery, diced

1/4 cup chopped onion

Preparation

Wash chicken thoroughly. Put in a large soup pot, cover with water. Heat to almost boiling. Skim off the scum, then add the rest of the ingredients and cook on medium heat for 1 hour

Remove meat and strip the meat from the bones, discard the skin and bones. Cut the dark meat into bite sized pieces and return to the pot. Bring to a simmer.

Serve soup with your favorite noodles.

Chicken salad Take the white meat and dice it. Add salt, pepper and celery seed. add diced celery and chopped onion. Stir in mayonnaise, mix thoroughly. Serve on Kaiser rolls.
