Ingredients
Mam Mam’s Springerlies
1 pound pulverized (10X) sugar
1 pound flour - sifted
4 eggs
1 tsp baking powder
1/4 tsp anise oil
Preparation
Beat the sugar and eggs for 20 minutes. I used my kitchenaid. You should see lots of bubbles in the mixture.
Add the anise oil, then the sifted flour, and the baking powder. Beat 5 more minutes.
Drop by teaspoons onto greased/buttered baking sheets. (I found it made a stiff dough and that you could almost pinch off lumps of dough to place on cookie sheets.) Bake at 325 degrees for 10-14 minutes - until light brown.
Most recipes call for letting the cookies sit on the baking sheets for at least 8 hours to overnight before baking. I didn’t do that.
Some recipes call for baking at 350 degrees for 15-20 minutes but i think that would make them too well done.
