Ingredients
1/3 cup sliced almonds
2 tbsp sugar
1/2 head lettuce, torn into bite size pieces
1 small bunch romaine, torn
2 medium stalks celery, thinly sliced
2 green onions (with tops) thinly sliced
1 11 oz can mandarin oranges, or 4 small clementines (cuties), peeled, pithed and segmented
Sweet-Sour dressing
1/3 cup olive oil
3 tbsp sugar
3 tbsp champagne or white wine vinegar
1 tbsp snipped parsley
1/2 tsp salt
dash of red pepper sauce
Preparation
Cook almonds and sugar over low heat, stirring constantly until sugar is melted and almonds are coated. Cool on waxed paper and break apart.
Toss lettuce, celery, onions and oranges in dressing until well coated. Top with candied almonds.
