Ingredients

1 T vegetable oil

1 small onion, chopped

1/2 t salt

1 clove garlic, minced

1 chile Serrano minced

1 T fresh ginger, minced

1.5 lbs. diced mango

2 T + 2 t each cider vinegar, raisins, and brown sugar

Preparation

In a 2 qt saucepan, saute onion with 1/4 t salt till soft, add ginger, garlic and chile and sauté for another minute. Meanwhile, mix the other ingredients in a bowl with the rest of the salt, and add to the pot. Simmer covered for about 1/2 hr until mango is soft. Cool uncovered.
