Ingredients

1/4 cup Lime Juice

2 Tbsp Olive Oil

1 tsp Salt

1 1/4 tsp Pepper

2 ripe Mangoes

1 Jicama (1 lb)

1 big Avocado

1/4 cup Cilantro

Preparation

In a small bowl whisk together lime juice, olive oil salt and pepper. Set aside.

In a medium bowl combone mango and jicama. Cut avocado in half, remove pit, and skin. Cut in to 1/2 inch cubes and add to mango and jicama. Add lime vinaigrette and toss well to combine. Add cilantro. Can add orange segments.
