Ingredients
2 large mangoes, peeled and cut into 1/2 inch dice
1 cup coarsely chopped ciliantro
3/4 cup julienned fresh mint
1/2 cup finely minced onion
1/2 jalepeno, seeded and finely minced
juice and zest of 2 limes
salt and pepper
Preparation
Combine all ingredients in a large bowl and let rest at room temperature at least one hour. Adjust seasonings and serve Nice with grilled pork, shrimp or fish.
