Ingredients

1/2 cup roasted red peppers finely diced

1/3 cup fresh basil chopped

1/4 cup Calamata olives, pitted and finely chopped

1/4 teaspoon crushed red pepper flakes

3 cloves garlic chopped

1/2 cup extra virgin olive oil

12 ounces bocconcini(baby fresh mozzarella balls)

Preparation

Combine the diced peppers, basil, olives, red pepper flakes, garlic and olive oil, and pour over bocconcini in a bowl. Cover and marinate for at least 4 hours, preferably 48 hours in the refrigerator. Serve with toothpicks.
