Ingredients

2-3 Flank Steaks (membranes removed and scored)

Marinade

1/2 Cup Soy Sauce

2 Tbsp Honey

1/2 tsp Ground Ginger

1 Garlic Clove, minced

2 tsp Vegetable Oil

2 Tbsp Dry Sherry

Chipotle Mayo

1 Chipotle Pepper in Adobo

1/2 Cup Mayonnaise

Preparation

Mix marinade ingredients. Pour into freezer bag or deep sided dish. Marinate meat for 24 hours, turning occasionally.

Cook meat on hot grill 4-5 minutes per side until medium-rare. Slice meat across the grain into thin pieces.

If serving on a sandwich prepare Chipotle Mayo… Mince 1 Chipotle Pepper for each 1/2 cup of Mayo. Stir minced pepper into the mayo with 1 Tbsp of Adobo sauce.
