Ingredients

1-2 lb cubed lamb

2 tbsp extra virgin olive oil

1 tsp dried oregano

2 clove garlic, minced

1 lemon (juiced and 2 tsp grated lemon zest)

Veggies of your choice to be steamed

1 cup brown rice

Preparation

Cook brown rice as package instructs (try cooking with fresh chicken or vegetable broth for a bit more flavour). Combine all ingredients in a bowl. Set aside to marinade for at least 4 hours. Stick the meat on skewers and grill until lamb is cooked through, rotating occasionally (can use a grill or a large fry pan). Serve with brown rice and your favourite steamed veggies (eg. Carrots, broccoli, cauliflower, snap peas, etc.).
