Ingredients

14 tablespoons of butter

6 lbs russet or yukon gold potatoes

1 tbl + 1 teas salt

1 1/2 cup sour cream

1 teas pepper

6 tbl finely chopped chives

2/3 cup bread crumbs

2/3 cup parmesan cheese

Preparation

Boil potatoes. Mash with 12 tbls of butter, sour cream 1 teas salt and pepper. Add chives. At this point can keep for up to 3 days. Combine bread crumbs, butter, cheese and sprinkle on top. Bake 400 degrees for 30-40 minutes.
