Ingredients

3 T unsalted Butter

1/3 C Onions, diced

1/2 C Mushrooms, sliced

4 pcs Matzah, (2oz), broken into pieces

2 Lge Eggs, lightly beaten

Preparation

  1. In large skillet, over low heat, melt 2 T butter; add onions and cook, stirring, until carmelized .. about 5 minutes
  2. Add mushrooms, raise temperature to medium-high and cook, stirring until the mushrooms are soft … about 5 minutes; season with plenty of salt and pepper
  3. Crumble matzah and add eggs; stir until well distributed
  4. Add remaining 1 T of butter to skillet and let melt; cook, tossing to coat matzah and vegetables until brown .. about 5 minutes; season with salt and pepper to taste. Serve
