Ingredients

1 medium Carrot

1 large Granny Smith Apple

½ cup Vegetable Oil

2 large Eggs

1/3 cup Sugar

2 teaspoons Vanilla

½ cup Unsweetened Coconut, shredded

1/3 cup Raisins

1/3 cup Pecans

¾ cups Whole Wheat Flour

½ cup Rolled Oats

3 tablespoons Wheat Germ

1 teaspoon Baking Soda

¾ teaspoon Cinnamon

½ teaspoon Baking Powder

¼ teaspoon Salt

¼ teaspoon Ground Ginger

1/8 teaspoon Nutmeg

Preparation

Preheat oven to 375.

Shred carrot and apple. Combine oil, eggs, sugar and vanilla. Mix well. Add carrots, apples and remaining ingredients. Spoon batter into muffin cups ¾ full. Bake until tester comes out clean, 20 minutes

Yield: 12 Muffins
