Ingredients

4 Tbsp olive oil

½ cup chopped onion

2 Tbsp chopped garlic

2 - 10 oz. pkg frozen, chopped spinach, defrosted, squeezed completely dry, chopped again.

2 Tbsp unsalted butter

2 lbs ground sirloin or round steak

2/3 cup grated Parmesan cheese

4 Tbsp heavy cream

4 eggs, lightly beaten

1 generous tsp dried oregano, crumbled

Salt

Freshly ground black pepper

Preparation

Heat olive oil in a large, heavy skillet. Add onion and garlic, and cook over moderate heat until they are soft but not browned. Stir in the spinach and cook until any remaining moisture has boiled away and the spinach sticks slightly to the pan. Transfer spinach mixture to a large bowl. Melt 2 Tbsp butter in the same pan and lightly brown the ground beef. Stir to break up any lumps. Add the meat to the spinach mixture. Then add the Parmesan cheese, heavy cream, eggs, and oregano to the meat and spinach mixture. Mix it all together and season with salt and pepper to taste.
