Ingredients
Glaze:
1/2 C ketchup
4 T brown sugar
4 t cider or white vinegar
Meatloaf:
2 t vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 lg eggs
1/2 t dried thyme
1 t salt
1/2 t grd black pepper
2 t Dijon
2 t Worcestershire
1/4 t tabasco
1/2 C whole milk or plain yogurt
2 lbs meatloaf mix
2/3 C crushed saltines OR quick oatmeal OR 1 1/3 C bread crumbs
1/3 C parsley, minced
6-8 slices bacon
Preparation
- For glaze, mix all ingredients in a small saucepan and set aside.
- Heat oven to 350.
- Saute onion and garlic in oil about 10 min then set aside to cool.
- Mix eggs through yogurt together. Add to meat, crackers, and parsley.
- Blend with a fork.
- Place on foil-lined pan and shape into loaf. Brush with half of glaze and bacon.
- Bake until internal temp. is 160- about 1 1/2 hr. Cool 20 min. before serving.
- Simmer glaze until thickened slightly.
