whole chicken
2-3 Cloves Garlic (or more :))
Kosher Salt
Whole Pepper Corns
2-3 Lemons (or more :))
2 Sprigs Rosemary
Zest from 1 Lemon
1/4 C Olive Oil
Lemon Juice from (2) Lemons
Preparation
Preheat oven to 400. Grind, in your favorite Mortise and Pestle, the garlic, salt, pepper, zest, lemon juice, rosemary, and olive oil. Rub most of this mixture on the bird skin and the remainder under the bird skin (cloves under the skin is good too). Place 2 halved lemons inside the bird and roast at 400 for a few hours (~2-3).
It is good to make the mixture in advance and let the flavors meld for a bit. We also make more so we can baste with it.
