Ingredients
1 Tbs oil
4 garlic cloves
3 tomatoes chopped
1 Tbs of capers rinsed and drained
1/4 cup green olives sliced crosswise
1/4 tsp dried Oregano
Salt and pepper to taste
4 red snapper or other firm fleshed white fish fillets (grouper)
Preparation
In a large skillet heat the oil over medium heat. Add the garlic until fragrant about 30 seconds. Add the tomatoes, olives, capers and oregano and cook stirring frequently, until the tomato juices begin to evaporate, about 3 minutes. Season the sauce with salt and pepper to taste. Add the fish and cook, turning once, until a fork inserted into the thickest part of a fillet meets no resistance, about 5 minutes in total.
