Ingredients

8 yellow zucchini squashes

1 onion

Salt and pepper to taste

1 clove garlic, minced

1 egg, slightly beaten

3 Tbsp. bread crumbs plus 1/4-1/2 cup breadcrumbs

4 oz. cheddar cheese, grated (or Mozzarella)

4 Tbsp. butter

Preparation

Slice crookneck yellow squash into medallions, approximately 1/4 inch thick. Season with salt, pepper and garlic and steam until soft. Transfer to an 8 x 8 casserole dish and mash with a fork.

Mix egg and cheese and weave into the mashed squash. Top with breadcrumbs. Dot with butter.

Bake uncovered in 350°F oven for 20-30 minutes.
