Ingredients
1 clove garlic
2 T freshly grated Parmesan cheese
2 T red wine vinegar
1 T balsamic vinegar
1/2 tsp. oregano
1/4 tsp. salt
1/2 tsp. freshly ground pepper
1/3 C EVO
1/4 lb. mesclun
1/3 C toasted pine nuts
Preparation
In a blender, combine the garlic, Parmesan, red wine vinegar, and balsamic vinegar, oregano, salt and pepper and process until smooth. With the machine on add the EVO in a steady stream and process until smooth. Transfer to a large bowl, add the mesclun and pine nuts and toss.
