Ingredients
3/4 cup cornmeal
3/4 cup flour
1/2 mesquite meal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup whole-milk yogurt
1/2 cup milk
1 egg
4 Tablespoons honey
4 Tablespoons vegetables oil
3/4 cup kernels corn
Preparation
Preheat oven to 350 degrees and grease an 8-inch square baking pan.
Combine the dry ingredients in a mixing bowl. In another bowl, blend the wet ingredients together, and add to the dry ingredients. Stir until combined. Fold in the corn kernels.
Pour into the baking pan and bake 20 to 25 minutes, until golden brown.
