Ingredients

2 teaspoons olive oil

1 cup chopped onion

1/2 cup green pepper

2 cups cooked long-grain rice (cooked without salt or fat)

1/2 teaspoon ground cumin

1/4 teaspoon ground red pepper

1/8 teaspoon dried coriander

3/4 cup chopped tomato

1 (15-ounce) can black beans, rinsed and drained

Preparation

  1. Heat oil in a large skillet over medium-high heat. Add onion and green pepper; saute until tender.

  2. Add rice and next 3 ingredients to skillet; saute 3 minutes. Add tomato and beans; saute 3 minutes or until thoroughly heated.
