Ingredients

1 lb ground beef (or chicken)

1 Tbs taco seasoning

1 Tbs coconut oil

1/2 cup water

Cheddar cheese, shredded

6-10 Tortillas, cut in half

Sour cream or plain yogurt, to taste plus 1 Tbs

1 avocado, pureed

1/2 tsp lime juice

1/4 tsp salt

1/4 garlic powder

1/4 cayenne pepper

Preparation

Preheat oven to 350 degrees (F). Brown meat in skillet and drain. Add taco seasoning, water, and coconut oil. Stir until well mixed and coconut oil is melted. Smooth a layer of sour cream on a tortilla. Top with meat mixture and cheese. Roll up and place fold side down on baking sheet.

While taquitos are baking, mix your avocado dip - avocado, 1 Tbs sour cream or plain yogurt, lime juice, salt, garlic powder, and cayenne pepper.

Serve with tortilla chips and fresh salsa.
