Ingredients

1/2 cup unsalted butter

3 large eggs

1 cup sugar

zest of 3 large lemons

1/2 cup fresh lemon juice

Preparation

In small microwave safe bowl, heat butter until melted.

In larger microwave safe bowl whisk together the eggs, sugar, lemon zest and juice. Whisk in melted butter.

Cook in microwave on high for 1 1/2- 2 minutes whisking every 30 seconds until curd is smooth and thick enough to coat a wooden spoon(a little less thick than pudding).

It usually takes longer than 2 minutes, but the key is to stir often enough that it doesn’t cook till it’s like scrambled eggs.
