Ingredients
12 eggs
6 ounces of Conecuh sausage, cut in 1/4" cubes. I used the Cajun Conecuh, but use whatever you like. (Substitute with 6 ounces of Chorizo for authentic dish.)
1/4 cup of onion, diced
1/4 cup of bell pepper, diced (use Serrano with Chorizo)
2 handfuls of corn tortilla chips, crumbled, but not crushed
4 ounces of shredded cheddar cheese
2 tablespoons of milk
salt and pepper
a dash of garlic salt and Cajun seasoning (do not use if making with Chorizo)
To garnish:
Sour cream
Salsa
Shredded cheese
Corn tortilla chips or tortillas
Preparation
Mix all ingredients and scramble on medium heat just like you would normally scramble eggs.
These can be placed on a plate and topped with garnishes, or placed in a tortilla and topped with garnishes.
