Ingredients
5 Large egg whites
1/4 cup Unsweetened almond milk (or low fat milk)
3/4 cup Pumpkin
3/4 cup Low fat cottage cheese
1/2 tsp Cinnamon
1/4 tsp Pumpkin pie spice
1/4 cup Baking stevia or 1/2 cup sweetener of choice that measures like sugar
Pinch Salt
Optional: 1 tsp vanilla or maple extract
2 WWP+*
Preparation
Spray 4 small mason jars or ramekins with non-stick cooking spray, (be sure they fit in your crockpot first). Place all of the ingredients in a blender and blend until smooth. Pour into jars, dividing evenly. Cook on high for 4 hours or on low 8 hours. Enjoy with Tru Whip if desired!
(You can also bake the pumpkin pies in your oven. Place the ramekins/jars on a baking sheet, and bake at 350 degrees for 50-55 minutes, or until set.)
