Ingredients
2 dozen eggs (or equivalent amount of egg beaters)
Salt & pepper to taste
1 pound bacon fried and chopped into small pieces (or substitute diced ham)
1 diced onion
1 diced green pepper
1 can mushrooms (optional)
2 cups shredded cheese
Preparation
- Preheat oven to 350 degrees
- Spray two 12-muffin tins with Pam
- Beat the eggs in a bowl (add small amount of cream, milk, or water to egg mixture to make a fluffier blend
- Fill muffin cups about 1/2 way with egg mixture
- Drop equal amounts of onion and green pepper in each muffin cup
- Add equal amounts of bacon or ham to each muffin cup
- Top each muffin with cheese
- Bake for 30 minutes
- Cool and freeze
