Ingredients

2 dozen eggs (or equivalent amount of egg beaters)

Salt & pepper to taste

1 pound bacon fried and chopped into small pieces (or substitute diced ham)

1 diced onion

1 diced green pepper

1 can mushrooms (optional)

2 cups shredded cheese

Preparation

  • Preheat oven to 350 degrees
  • Spray two 12-muffin tins with Pam
  • Beat the eggs in a bowl (add small amount of cream, milk, or water to egg mixture to make a fluffier blend
  • Fill muffin cups about 1/2 way with egg mixture
  • Drop equal amounts of onion and green pepper in each muffin cup
  • Add equal amounts of bacon or ham to each muffin cup
  • Top each muffin with cheese
  • Bake for 30 minutes
  • Cool and freeze
