Ingredients
3 cups-All purpose flour
1/2 tsp.-Baking soda
1/2 tsp.-baking powder
3/4 cup- softened salted butter(important for flavor quality)
8 oz or one block softened cream cheese
2 cups- sugar or Splenda
2 Large eggs
About 4 mashed ripe bananas( can still be yellow and taste great)
1/2 tsp.-vanilla extract or almond extract(both are great)
3/4 cups-chopped walnuts(optional and adjustable)
Topping:
1/2 cup-brown sugar
1/2 cup-walnuts
1 tbs-flour
1/4 tsp- cinnamon
Preparation
Preheat oven 350 F. Grease and flour two 8x4 loaf pans In a large bowl wire whisk first three dry ingredients. In another large bowl cream butter&sugar with hand mixer Then blend in cream cheese until smooth Add one egg at a time and mix Fold dry mixture in. After mixed add in mashed bananas. Add walnuts.
Divide mixture evenly between two loaf pans.
Now mix your topping ingredients gently with a fork. Sprinkle evenly over the two loaves.
Bakes for an hour to an hour and 15 minutes.
Note: this bread freezes well.
