Ingredients
1 can each:
garbanzo beans
kidney beans
whole black beans
fresh petite green beans (haricots vert)
DRESSING;
2 T champagne vinegar
2 t dijon mustard
grated zest & juice of 1 lemon or lime
1/2 t sugar
2 T evoo
Sea salt and fresh ground pepper
Preparation
(Blanch 1-2 min) steam green beans until al dente then shock them in ice water. Cut into bit size strips
open cans, rinse and drain beans combine all beans
DRESSING PREP: whisk vinegar, mustard, zest, juice, & sugar. gradually whisk in evoo and S&P
Pour over beans and season with more S&P
