Ingredients
Chop finely. (Squeeze out juice of first 3 fruits
w/ a slotted spoon, otherwise it’s too soupy):
1/2 fresh pineapple
1 large or 2 small mangos
1/2 cantelope
Chop in bigger chunks:
1-2 ripe avocados
1/4 cup onion
3/4 cup fresh cilantro
1 cup fresh strawberries
1 large garlic clove minced (I crushed mine)
1 T olive oil (I used citrus infused)
1 T rice vinegar
1T lime juice
3 T fresh basil (use scissors to cut
not too finely)
salt and pepper to taste
Mix all together. Serve at nearly
room temp. to taste all the ingredients better.
I use this salsa on fish and chicken, too.
