Ingredients
3/4 cup butter, melted or shortening
1 cup dark brown sugar
1 egg
1/4 cup molasses
1/2 tsp salt
2 cups all-purpose flout
2 tsp baking soda
2 tsp cinnamon
1 tsp ground ginger
1 tsp ground cloves
Raw sugar for rolling cookies
Preparation
- Beat sugar into melted butter until fluffy.
- Slowly add sugar and beat until fluffy.
- Beat in egg, molasses and salt.
- Sift together dry ingredients.
- Slowly beat dry ingredients into the egg mixture until well combined.
- Chill for at least 1-2 hours.
- Preheat oven to 375 F.
- Roll chilled cookie dough into small walnut-sized balls. Roll each ball in raw sugar.
- Place on lightly greased or nonstick cookie sheet about 3 inches apart.
- Bake about 8-10 minutes, until set and just beginning to brown on edges. DO NOT OVERBAKE or they will be very hard when cooled.
- Cool 2-3 minutes on cookie sheet, then transfer to a wire rack to cool completely.
