Ingredients
MOLTEN CHOCOLATE CAKES
½ lb unsalted butter
½ lb bittersweet chocolate
½ cup sugar
3 large eggs
3 tablespoons all-purpose flour
a pinch salt
Preparation
–Melt butter and chocolate together over a water bath.
–Whisk in sugar and let cool slightly.
–Whisk in eggs, flour and pinch salt. Butter ramekins and fill 2/3 full with batter.
–Preheat oven to 350°F.
–Bake cakes until puffed and set around the edges but still liquid in center, 20 to 30 minutes.
