Ingredients

1# crab

2 pieces soft white bread, crust removed, crumbed

1 1/2 eggs

1/3+ c. mayo

1/4 grated onion and juice

old bay..1T.

1 t. dried or fresh thyme

1/2 t. salt, 1/2 t. pepper

2 t. worcestershire

olive oil and butter for frying

Preparation

In bowl, mix bread crumbs, mayo, ionion, thyme, old bay, salt, pepper, worcestershire and eggs(beaten lightly). Mix then gently stir in crab. Shape into cakes. Fry until lightly browned and cooked through about 5 min. per side. Favorite sauce: catsup, worcestershire, tabasco, lemon juice and horseradish. Accompany with corn tossed with butter and salt, frisee salad with balsamic vinaigrette and 1/2 an avocado.
