Ingredients

3 lbs potatoes, medium

1 cup green onions, chopped

1/2 t celery seed

2 t salt

1/8 t pepper

6 slices bacon, diced

1/2 c apple cider

2 T sugar

3 T water

1 egg, beathen

2 T parsley

1/2 chopped celery

Preparation

Cook potatoes until tender and cool. Peel and slice into a large bowl. Add onion and next 3 ingredients. Mix and keep warm. Cook bacon until crisp and drain. Save drippings. Mix vinegar, sugar, and water with cool bacon drippings. Heat to simmering, add slowly to egg, beating constantly. Pour over potatoes, add 1/2 of bacon and parsley. Mix and serve warm decorating top with remaining bacon and parsley.
