Ingredients

8 large potatoes

1 small block (8 oz) Velveeta, cubed

1 cup mayonnaise

1/2 cup onion (if desired)

6 slices raw bacon, cut into pieces

Preparation

Boil potatoes until soft. Peel when cool enough to handle, but still warm, and cut into cubes.

Mix mayonnaise, onion, and cheese with potatoes & put into 13x9 pan.

Top with bacon.

Bake uncovered at 325 degrees for 1 hour.
