Ingredients
Eye of round roast (2-2.5 lbs)
1 t. paprika
1 t. garlic powder
vegetable oil
salt and pepper to taste
3 sweet peppers (green or yellow)
Lemon (1/2 thinly sliced, 1/2 juiced)
2 bay leaves
2 garlic cloves (crushed or thinly sliced)
1 C. Red Wine
2 C. water
Preparation
Rub roast with oil and sprinkle with paprika, garlic powder, salt, and pepper. Place in dutch oven and bake uncovered in 400 degree oven for 45 mins (30 mins for smaller roast).
Add sweet peppers and cook covered in 350 degree oven 30 mins. Let cool at least 1/2 hour. Slice thinly and serve with hard rolls and giardinere.
