Ingredients
1 1/2 c sugar
1/3 c cornstarch
1 1/2 c water
3 egg yolks beaten
3 T butter
4 T lemon juice
1 1/3 T grated lemon rind
Preparation
Mix first 3 ingredients in saucepan. Heat and stir til thick. Slowly stir 1/2 hot mixture into beaten eggs. Then beat into hot mixture in saucepan. Boil 1 min. longer, stirring constantly. Remove from heat. Continue stirring until smooth. Blend in rest of ingredients. Pour into baked pie shell. Cover with meringue. Bake until a delicate brown. Serve as soon as cool.
