Preparation

Wash in cold water and blot inside with paper towels, leave outside moist; stuff now if going to; fasten neck skin to body with skewer; push legs under band of skin at the tail or tie its tail; place breast side up on rack in shallow open roasting pan; insert meat thermometer in thigh muscle; place loose covering of “tent” of foil over turkey; roast in slow oven 325 degrees according to time table below; remove foil last 30 minutes to brown; final temp reading should be 180 to 190 degrees; ready to cook weight in lbs: 6-8 3.5 - 4 hours 8-12 4 - 4.5 hours 12-16 4.5 - 5.5 16-20 5.5 - 6.5 20-24 6.5 - 7
