Ingredients

4 lb cut up chicken

1 can crushed pineapple

2 tbsp cornstarch

3/4 tbsp sugar

1/2 cp soy sauce

1/4 cp vinegar

1 clove minced garlic

1/2 tsp dry ground ginger

1/4 tsp pepper

Preparation

  • Put chicken skin side down in baking dish
  • Combine 2 tbsp juice with all other ingredients. Heat over median until thick and bubbly
  • pour over chicken
  • Bake covered for 30 min @ 400
  • Flip
  • Spoon pineapple over chicken and discard the remaining pineapple juice
  • Bake 30 minutes longer
