Ingredients

2.5 pounds pork belly, skin removed

1/4 cup kosher salt

1/4 cup sugar

Preparation

  1. Put pork belly in plastic bag and cover with salt and sugar.
  2. Leave in refrigerator overnight, turning occasionally.
  3. Preheat oven to 450F.
  4. Place pork belly in rack in stoneware after brushing off excess salt and sugar.
  5. Cook for 20 minutes, baste pork belly, then cook for another 20 minutes.
  6. Reduce oven temperature to 210F and continue cooking for 50 minutes.
  7. Raise temperature to 450F and cook for another 20 minutes, keeping a close eye on surface fat so that it does not burn.
  8. Let rest.
