Ingredients

1 cup Old fashioned oats (or 3/4 cup oat flour)

3/4 cup Oat bran (or an additional 1 cup old fashioned oats)

1/4 cup Protein powder (vanilla or flavor of choice. Or an additional 1/4 cup oats)

1/2 cup Baking stevia or 1 cup sweetener of choice 1

1 tsp Baking soda

1 1/2 tsp Baking powder

1 1/2 tsp Ground cinnamon

1/2 tsp Salt

4 Egg whites

1/2 cup Unsweetened applesauce

1 (8 oz) Can crushed pineapple, (not drained)

1 cup Grated or shredded carrots

1/4 cup Shredded coconut (or additional 1/4 cup shredded carrots)

Optional: 1/4 cup chopped walnuts OR 1/4 cup raisins

1 Or 10-12 pkts stevia or to taste.

Preparation

Blend everything together in a blender or food processor until oats are smooth,(except for coconut and optional ingredients if using). (Place wet ingredients in the blender first for easy blending!)

Stir in coconut (or extra carrots) and raisins if desired. Sprinkle walnuts on top (or stir into batter) just before baking if using as well!

Bake muffins at 350 degrees for 30-35 minutes, or until toothpick comes out clean.
