Ingredients

4 chicken breasts

500g Prunes (French pref.)

125ml Olive oil

30ml (2 tbsp) pure clear honey

1 red onion peeled and sliced

3 cloves of garlic, roughly chopped

5ml ( 1tsp)ground cumin

15ml (1 tbsp)capers

5ml ( 1 tsp) freshly grated ginger

100g black olives pitted

225ml dry white wine

30ml ( 2 tbsp) fresh coriander chopped

Preparation

Remove skin from chicken & place chicken in ovenproof casserole add prunes In a jug mix oil, honey, onion, garlic, cumin, capers and ginger Pour mixture over chicken & prunes. Mix well. add remaining ingredients and mix Leave to marinate for 30min. Place the chicken in a preheated oven 180°C for 45min or until thouroughly cooked
