Ingredients

1 ¼ lbs. boneless, skinless chicken breast, cubed.

3 yellow onions

2 cups water

1 tbsp. minced gingerroot

1 tsp. each turmeric, cinnamon and sugar

½ tsp. saffron (optional)

1 sweet potato, peeled and cubed

4 carrots, cut in chunks

1 cup canned chick peas

1 tbsp. lemon juice

2 tbsp. parsley

Salt and pepper

Preparation

In non-stick skillet brown chicken over high heat; remove to plate and set aside. Reduce heat to medium and cook onions, stirring for 5 min. Add water, ginger root, turmeric, cinnamon, sugar and saffron; simmer. Add sweet potato and carrots, cover and simmer 20 min. Add chick peas, and lemon juice, stir, then add chicken, cover and simmer 10 min. Add salt&pepper to taste, serve over couscous.
