Ingredients

Cacao Amer 75g

Bittersweet Chocolate chopped 150g

Orange Juice or Water 120ml

Sugar 150 g

Cream (very cold) 4dl =400ml

Preparation

Heat the cocoa powder,chocolate, juice or water and sugar in a sauce pain over a very low heat. Stir constantly until a paste is formed. Remove from heat and allow to cool.

Beat the cream until very stiff and then fold it into the chocolate
