Ingredients
1 Pie shell
1 TBS Gelatin
1/3 cup of cold water
4 egg yolks, beaten slightly
1½ cup sugar
Juice and rind of 1 lemon
Juice and rind of 1 orange (not too yellow)
Chunk of butter the size of walnut
4 Egg whites
1 Cup whipping cream
Preparation
Bake pie shell. Soak gelatin in 1/3 cup of water and reserve. Combine egg yolks, ½ cup sugar, lemon, and orange in a round bottom bowl or pan. Cook over hot water stirring constantly. Add the butter and gelatin. Beat egg whites until stiff, gradually adding a cup of sugar. Fold the thickened mixture into the egg whites while still hot. Pour mixture into baked pie shell. Refrigerate. Before serving, whip 1 cup of whipping cream. Put over pie, and grate orange rind over it.
