Ingredients
2 T chopped dried mushrooms
3 T Margarine
1 Large Onion thinly sliced
2 Ribs Celery thinly sliced
1 Large Carrot Sliced Quarters
1/4 Cup Chopped Parsley
1 lb fresh mushrooms cut up
1 T flour
1 Qt (box) boiling Chicken Broth
1 Qt boiling Water w/ 1 1/2 t broth paste
1 Cup Barley
Preparation
Soak dried mushrooms in hot water 30 min Melt margarine in heavy pot Sauté onion, carrot, celery, fresh mushrooms til soft Salt to taste (but do not add until very end) Boil broth and water + paste in separate pot Add chopped dried mushrooms + barley to liquid Add flour slowly to vegetables and mix 5 min Add boiling broth to vegetables Cover pot and simmer 1 hour Check for salt and add if necessary
