2 medium shallots, thinly sliced

1 lb assorted sliced mushrooms

1 cup milk

3 large eggs

6 oz (~1 cup) cheese

Preheat oven to 350 Heat oil in skillet and add shallots, cook until translucent Add mushrooms, salt and pepper, cook until water is evaporated Sprinkle cheese on pie crust Add mushrooms and shallots Whisk eggs and milk together in a medium bowl and pour over mushrooms Bake for 30-35 min
