Ingredients

454 grams button mushroom

454 grams cremini mushroom

1/4 cup butter

3 big cloves garlic. Chopped

1/4 cup carrot. Medium dice

1/2 cup onion. Medium dice

1/2 cup white wine

900ml chicken or veg stock

250 grams goat cheese

1 bay leaf

1/2 teaspoon thyme

Salt

Pepper

Preparation

Sauté onion, garlic and carrot in butter Add wine and simmer till the wine smell has gone away Add mushrooms, sauté for a few mins Add thyme and bayleaf Add stock Cook for 20 mins Remove bay leaf Season with salt and pepper to taste Add goat cheese Blitz with hand blender till all mushrooms are puréed with no chunks.
