Ingredients

2 T. mayo

2 T. minced celery

1.5 t. lemon juice

1 t. minced fresh chives

salt

pinch cayenne

1 lb. lobster meat (tail cut to 1/2", claw 1" pieces)

6 new england style hot dog buns

2 T. unsalted butter, softened

6 leaves boston lettuce

Preparation

  1. Whisk mayo, celery, lemon juice, chives 1/8 t. salt and cayenne together in large bowl. Add lobster and gently toss to combine.
  2. Toast hot dogs buns with softened butter and sprinkle of salt in hot skillet until crisp and brown.
  3. Line each toasted bun with lettuce leaf and add lobster.
  4. serve
