Ingredients
1/4 c white cane sugar
1/2 c dark brown cane sugar
1/2 c unrefined coconut oil
1 egg
1/2 c milk
2 c all-purpose flour
2 t baking powder
2 c fresh blueberries
Preparation
Preheat oven to 375 F (190 C). Grease an 8 x 8 inch (or so) baking dish using a bit of oil. In a large bowl, cream together the sugar, coconut oil and egg. Sift the flour and baking powder together into a separate bowl. Stir the flour mixture into the sugar mixture, alternating with milk. For the fluffiest results, avoid over-mixing. Gently fold-in blueberries. Pour mixture into pan. Sprinkle additional brown sugar on top if desired. Bake for 25-30 minutes or until done.
